My sister and her fiancé were very generous for Christmas this year and gave me a waffle iron. As a kid, I used to make pancakes and waffles all the time. I guess it was probably one of the first things I learned to cook as a child. It always brings back special memories of birthdays, Christmas, etc. My Mom usually made them only for special occasions. I don’t blame her. They can get quite messy!
Today was the perfect day to invite my sis and her fiancé over to taste some of my waffles as the Man U v. Arsenal game was on. My fiancé is a huge Arsenal supporter and hers loves Man U, as does pretty much everyone else who likes soccer. Arsenal lost (I’m not surprised…..sorry honey haha!), but the waffles were amazing! I didn’t have time to take pictures of the fruits of my labour, but have attached a pic of our Manchester Terrier wearing his Arsenal jersey. We like to call him our little “Arsenal Terrier.”
Here is the recipe I used from the booklet that came with my Cuisinart Waffle Maker. I like to make lot of extras to freeze for a quick breakfast. They taste great when popped into the toaster. Not exactly what I would call healthy eating; however, you can make some substitutions to cut some of the fat and calories.
Banana Almond Waffles
Makes 20 waffles
- 4 cups unbleached all-purpose flour (I used whole wheat flour)
- 1/4 cup granulated sugar
- 4 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoons salt
- 4 eggs, lightly beaten
- 3/4 cups vegetable oil
- 2 cups low-fat plain yogurt
- 1 1/2 cups whole milk (I used 1% partly skimmed)
- 2 cups mashed banana
- 1 cup chopped almonds
Combine flour, sugar, baking powder, baking soda, and salt in a mixing bowl and stir to combine. In a separate bowl, whisk together the eggs and oil and stir into dry ingredients. Stir in yogurt. Add milk and stir until mixture is a smooth batter. Stir in banana and almonds until incorporated. Let batter rest 5 minutes before using.
